How to Make a Savory Michelada Cocktail

If you’re the kind of person who prefers savory over sweet, then you want a michelada: This traditional Mexican beer-based cocktail is made with lime juice, tomato (or clam) juice, hot sauce, Worcestershire, and a “liquid seasoning” called Maggi, all served over ice. (Think Bloody Mary, but with beer instead of vodka.)

Fun fact: Maggi is a sauce that has a similar flavor profile to soy sauce; it’s used in all types of cuisines to give dishes a “richer and meatier” flavor.

Thanks to the Interwebs, you’ll find what seems like a million variations, but if you’re a michelada newbie, this recipe is a great way to introduce (and prepare) your palate for the more elaborate versions.

In our Savory Michelada, we subbed in steak sauce (seriously) and black pepper for the savory and the spicy, and added thin slices of yellow and red bell peppers for some crunch. This is definitely a drink you can sink your teeth into!

Ingredients

  • 1 medium red bell pepper , cut into thin slices (reserve 4 slices for garnish)
  • 1 medium yellow bell pepper , cut into thin slices (reserve 4 slices for garnish)
  • 12 fl. oz. fresh lime juice
  • ¼ cup all-natural steak sauce
  • ½ tsp . ground black pepper
  • Sea salt (or Himalayan salt) (to taste; optional)
  • 40 fl. oz. lager beer (like Pacifico)
  • 1 lime , thinly sliced

Instructions

  1. Place bell peppers and lime juice in a large pitcher; muddle until well mixed.
  2. Add steak sauce, pepper, and salt (if desired); mix well. Refrigerate, covered, for 4 hours, or overnight.
  3. Add lime juice mixture evenly to each of eight highball glasses; top slowly and evenly beer; mix gently to blend.
  4. Garnish each drink with half slice each of red and yellow bell peppers and a lime slice.
