Ingredients

  • 1 tsp. olive oil
  • 1 medium onion thinly sliced
  • 4 cloves garlic thinly sliced
  • 8 cups chopped kale
  • 1 ½ cups low-sodium organic vegetable broth
  • ½ tsp. crushed red pepper
  • 2 tsp. red wine vinegar
  • 1 dash sea salt
  • 1 dash ground black pepper

Instructions

  1. Heat oil in large skillet over medium-high heat. 

  2. Add onion; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.

  3. Add garlic; cook, stirring frequently, for 2 to 3 minutes, or until garlic is soft. 

  4. Add kale and broth. Bring to a boil. Reduce heat to medium low; gently boil, covered, for 15 minutes.

  5. Add vinegar, salt, and pepper; mix well.
