Carrot cake is healthy, right? Because carrots, right?

OK, so truth time: Carrot cake may contain traces of beta-carotene from carrots and omega-3s if it has walnuts, but it’s still cake.

Which means flour and plenty of oil and sugar.

And let’s be real — it’s usually smothered in a thick layer of cream cheese frosting (in other words, cream cheese fluffed up with butter and sugar).

But it tastes.so.good.

With these devilishly good Carrot Cake Shakeology Energy Balls, you can have your carrot cake and eat it, too.

These “bliss balls” are made with shredded carrots, oats, Vanilla Whey Shakeology and sweetened with dates. And the right balance of cinnamon, clove, and ginger makes you feel like you’re enjoying a real bite of carrot cake.

I tested several batches to get the flavor just right for these Carrot Cake Shakeology Energy Balls.

To save time, I bought a bag of pre-shredded carrots. Freshly grated carrots are wetter and could make the “dough” for the carrot cake balls a little sticky.

If you grate your own carrots for this recipe, use a paper towel to squeeze out the excess moisture before you add them to the food processor.

These devilishly-good Carrot Cake Energy Balls really taste like carrot cake, and they're only 90 calories each!

Ingredients

  • scoops Vanilla Whey Shakeology
  • ½ cup dry rolled oats
  • cup all-natural smooth almond butter
  • 4 Medjool dates, coarsely chopped
  • ¼ cup walnut pieces
  • ¾ cup shredded carrots
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground cloves
  • ¼ tsp. ground ginger

Instructions

  1. Combine Shakeology, oats, almond butter, and dates in food processor; pulse until dates are incorporated.

  2. Add walnuts, carrots, cinnamon, cloves, and ginger; pulse until just blended.
  3. Roll into 15 balls, about 1-inch in diameter each.

  4. Serve immediately, or store in an airtight container in the refrigerator for up to five days.
