See how Patricia Edem prepped her healthy groceries (on the left) to make a variety of easy meals during the week. Instead of organizing all of her meals at once, she likes to mix and match ingredients each day to keep things interesting. She cooked a few veggies, proteins, and carb dishes, plus cut up veggies that can be easily added to any meal. This week she made: sautéed kale with onions, lemony green beans (try this recipe), sliced grapefruit, spaghetti squash, cooked turkey sausage, chopped romaine hearts, eggs scrambled with herbs and spices, Italian baked chicken breast, chopped cucumber and celery for salads, chopped zucchini, chopped bell peppers, steel-cut oatmeal with cinnamon and maple syrup, and cinnamon mashed sweet potatoes.

Here’s a great idea: Patricia keeps a pitcher of cucumber and lime-infused water in the fridge, which makes it a lot easier to stay hydrated.

@nan791 took this yummy lunch to work last week. She stuffed a sweet red pepper with ground chicken and topped it with #mozzarella. She also had fresh berries and a chopped veggie salad drizzled with lemon juice.

On days when she’s super busy or not feeling up to par @inspiredsimplyfitnessproject, is grateful for her meal prep. She had cooked chicken breast, hard-boiled eggs, quinoa, and lettuce ready to go and was able to make a healthy lunch for herself in 2 minutes.
