Tropical Strawberry Shakeology gives these pancakes a subtle strawberry flavor, and slices of fresh strawberry add even more berry-liciousness!

This recipe makes three small pancakes. To get the classic layered strawberry shortcake look, mix plain Greek yogurt with maple syrup and spread it on top of one pancake, then add sliced strawberries.

Repeat with the remaining pancakes to create three layers. Voilà: Strawberry Shortcake Pancakes!

Strawberry Shortcake Pancakes

This Shakology recipe is a berry-licious change from regular pancakes. (And you can eat these any time of day!)

Ingredients

  • 1 scoop Tropical Strawberry Shakeology
  • ½ tsp. baking powder
  • ¼ cup / 60 ml unsweetened almond milk (or water) 
  • 1 large egg
  • Nonstick cooking spray  
  • cup / 80 g reduced-fat (2%) plain Greek yogurt
  • 1 tsp. pure maple syrup
  • ½ cup / 85 g sliced strawberries

Instructions

  1. Add Shakeology and baking powder to a small mixing bowl. Stir until combined.   

  2. Add almond milk and egg; stir until combined.    

  3. Heat a medium nonstick skillet over medium-high heat; lightly coat with spray. Spoon batter evenly into pan to form three small pancakes.  

  4. Cook for 2 minutes; flip. Cook for 2 additional minutes, or until cooked through.

  5. Add yogurt and maple syrup to a small bowl. Stir to combine.  

  6. Layer one pancake with ⅓ yogurt mixture and ⅓ strawberries. Repeat with remaining pancakes, yogurt mixture, and strawberries to create 3 layers. Enjoy!
